Banana Oat Bread

This recipe needs to be passed around. You now know about my oatmeal obsession after my post on Oatmeal Pancakes. So to continue on, may I introduce you to Banana Oat Bread (recipe from The Mother Huddle)? This was perfect. I liked it much better than regular banana bread because it tasted like it had more depth to it. I froze half of the loaf and I’m going to thaw it out right now for breakfast…my mouth is watering.
(Please see the original recipe post for nicer photos. Recently I’ve been struggling with caring a whole lot about getting things perfect with photos during the creative food process and in this particular case…I just wanted to partake. But I promise I’ll be better because I really do like pretty food pictures!)
Next time I’ll make it in muffin form. I’m really in love with muffins right now. Speaking of which…I’m thinking about having a new obsession…*I know the suspense is too much and my family is probably thinking, “Man, what will it be now”*…taa daa, WHEAT BRAN! Woo Hoo. Yea! for wheat bran. We have these crazy good plain’o wheat bran muffins at our breakfast cart at work. I’m determined to duplicate them some how. I’m taking recipe suggestions if you have them…

I’m so excited to try this…thanks for sharing! I do love using flax seed…it makes me feel like things are much healthier. I haven’t tried banana with oatmeal, but I’m sure it’s great. Can’t wait to try it!
