Pancakes are perplexing to me. They are good. We all eat them for breakfast…but they are CAKES. It seems way more efficient to eat an egg, fruit or some yogurt…etc. I mean, breakfast is supposed to be the most important meal of the day and we eat CAKE. Weird. I guess it could be all about the toppings…if you put fruit on them or nuts. But I usually am only so ambitious as to use syrup. I know, lame, but true! So I saw THIS recipe from Orangette for Oatmeal Pancakes and I thought, “Hmm…they may be on to something!”

There are two things I HATE when it comes to food. 1st, Hot Oatmeal. Oh man, that stuff just makes me want to gag. I’m pretty sure it goes back to my childhood and my mother trying to force it down my throat one morning (I’m still not sure if this was figurative or if it really happened). 2nd, doughnuts. Even the smell of doughnuts can send me over the edge.

I know how good hot oatmeal is for you. I have made an honest effort to like it. I just can’t. So I like the idea of using oatmeal for pancakes. They actually taste nothing out of the ordinary which I’m still unsure if it is a good or bad thing. The only difference may be a lumpier, crunchier texture…but really not by much. They are also buttery…because they call for a whole stick of butter…AND I melted some butter on top.

They freeze well also. I made a double batch and froze most of them for Miss Raine’s quick breakfasts on school mornings. So easy to pop one in the microwave for a few seconds.

There has got to be a way to make them more “oatmeal-y”. Because I like oatmeal cookies and I kinda hoped they would taste like a fluffier oatmeal cookie. I’ll think about it and get back to you!
