
So the breakfast cart at work sells these crazy good bran muffins. We are all addicted to them. Of course, I have been on a mission to re-create them at home…because I’m ambitious like that…and guess what? Yep. I think I was successful.
Bran muffins do not have as many calories as other muffins…they have lots of good fiber. So they are good for you, a plus, considering they are also super yummy.

Now, there are a few changes I made. First, I did not use raisens. I just omited them. Why? Because raisen’s….excpecially cooked raisen’s… are gross. Second, I used whole wheat flour instead of white. Next time around I’m thinking about using applesause instead of the oil…but I’m torn because they are so good just how they are. I’ll update if I do.

Some tips when making these. It is very important for the deliciousness factor that the muffins have a nice hard crust on them. The last time I made them I opened the oven and actually listened to them cooking. I know this sounds weird but hear me out… you can actually hear the moisture being cooked out. When this sound stops…it’s time for them to come out. Also, if your wondering where to find wheat bran I found the flakes in the bulk section at Smiths. It looks weird…but go ahead and get it. There is different types of bran but these are made with wheat bran.
